Well, let's see... I'll use a numbering to keep track, but the games won't be in any strict order - just typing the really great games down as I can think of them. I'll probably forget some, too...
1. UFO: Enemy Unknown (or: X-COM: UFO Defense for those living on the wrong side of the pond)
2. Fallout -series
3. Sid Meier's Civilization -series
4. Sid Meier's Pirates!
5. Silent Storm
6. Space Rangers 2
7. King of Dragon Pass
8. Dwarf Fortress
9. X-Wing/TIE Fighter -series
10. Jagged Alliance -series
11. Operation: Flashpoint
12. Master of Orion I&II
13. Steel Panthers -series
14. Syndicate -series
15. Old LucasArts adventures (yes, a great many of them would deserve being individually mentioned, but since I'm stacking games in groups by series anyway...)
16. FlatOut -series (occasionally a driving game is good for relaxing, too :P)
17. NetHack (phew, almost forgot)
18. Sid Meier's Colonisation
19. Crusader Kings (consider it stacked with other Paradox strategies)
20. Max Payne -series
Now, I'm sure I couldn't remember a dozen or so awesome games that would deserve to be on the list. But practically all of those are must to know for anyone calling himself a game hobbyist.

ah yes. I forgot about the Sid Meier's games. Pirates! was a great game, and I like Civ's Revolution a lot as well.

A great many long-line gamers would always include Civilization in the Top 3 games of all time, but it's definitely something you can view best as a series instead of individual games - after all, it's just always a tweaked and (mostly) improved version of the old one. In my opinion, just the fact that Civilization after nearly two decades, Civilization keeps drawing you back to itself, forcing you to play just one more turn... or a thousand.
Obviously it's not a game to everyone's taste, but the series is definitely one of the foundations for modern computer games. Very few games have that kind of longevity and addictive character. Every game on my list, however, is one of those few. There isn't a single game I mentioned I couldn't imagine to be happily playing in 20 or 30 years' time :)

Can agree with the Pitfall games, though I reach not back as far to the Atari version. SNES, to be true.
Some of the all-time best are and will be the Total-War games and the Cossacks line, as well as Gothic. Also the games of C&C are rightful included.
Does anybody remember Dark Colony? Not the best game of all times, but worth a try; if anybody wants to try it´s available full and free around the net.
